Reginaldo Silvoni and his family run Fazenda São João in the arid micro-region of Coromandel in Minas Gerais, where one is hard-pressed to avoid seeing red soil, cows, and coffee. It is here that Silvoni cultivates mundo novo and catuai variety coffee approximately 1000 meters above sea level, employing a smart, albeit low-tech, underground drip irrigation system to help cope with the incredibly dry climate. It is so dry, in fact, that the mold problems that would usually face any caficultor who chooses to naturally process his coffee are non-issues at Fazenda São João, where the coffee is dried directly on earth patios. In addition to the low tone hazelnut, praline, milk chocolate, and fig, a dried cherry acidity complements the lower tones, along with a limey citrus accent, a faint jasmine note, and a sarsaparilla finish.
