One of the newest "factories" we're working with is located in eastern Embu County, on the slopes of Mt. Kenya. Gicherori Factory is part of the Kibugu Farmers Cooperative Society and boasts an active membership of about 850 small producers from seven villages in the area. These producers cultivate the SL28, SL34 and Ruiru 11 varieties on small plots around 1800 meters above sea level. Coffees are delivered to the washing station, disc de-pulped, and then sent to fermentation tanks. There the coffee dry ferments for 18-24 hours before it is graded and rinsed clean in concrete channels. The resulting coffee is then soaked in a second tank before being taken to raised beds to dry.
