In the far south of Huila, Hector Zuñiga has been cultivating coffee on finca El Progreso since 2011. Caturra, Colombia, and Castillo trees are grown on a small percentage of his seven-hectare farm. The soil is replenished with organic compost that includes coffee pulp. Ripe cherries are picked, sorted, then dry fermented for 21 hours.
