This coffee is sourced from family owned farms organized around the Shilicho Cooperative located within the Dara district of the Sidama region of southern Ethiopia. The Shilicho Cooperative currently has 1,712 members - all smallholder farmers from the immediate surrounding countryside. The cooperative joined the Sidama Coffee Farmers Cooperative Union (SCFCU), an umbrella organization established 2001 to support a sustainable coffee supply from cooperatives in the Sidama region. As a cooperative entity, SCFCU does an amazing job supporting forty-six cooperatives with more than 80,000 farmer-members!
This lot is derived from a particularly tasty day collection of heirloom variety arabica coffee. All of the coffee cherries here were washed in the traditional Ethiopian manner - after depulping, fruit covered beans are fermented under water up to 48 hours. When the fruit is ready to fall off the bean, the water is changed and the coffee is washed clean in a long series of canals. This clean parchment-covered coffee is then laid out to dry on traditional wooden beds, constantly monitored for moisture and temperature and hand picked clean of defects.
