Organic Hama
Kochere, Gedeo Zone, Ethiopia

Hama is back!  One of the most anticipated coffees we roast, it was in consultation with Takele Mammo, the former head of the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), that we connected with the organically grown coffees from the Hama producer group during a visit in 2011. Ethiopia is the birthplace of coffee, and the Hama a quintessential example of what the region can provide. The resulting coffee, once roasted, presents an unusually floral cup with highlights of acidity and sweetness. Complex and floral, with flavors of lilac, lavender and white grape.

Hipolito Garcia Microlot
Sierra Mixteca, Oaxaca, Mexico

This summer, coffee producers across the Mexican states of Chiapas, Veracruz, and Oaxaca competed in the "Aromas" quality competition and auction hosted by specialty exporter Caravela Coffee. Over the course of three days, samples were tasted, scored, vetted, and vetted again. Out of over a hundred coffees submitted, from farms large and small, Hipolito's coffee stood apart from the rest - reaching second place overall! While some of the top placing coffees came from farms with long pedigrees, this winner came from a small, 3 hectare family farm in a region very new to specialty coffee - Oaxaca's Sierra Mixteca. Extra care was taken during picking to ensure only the ripest of cherries progressed. The drying process was long and slow and gentle on the coffee; any imperfections were found here and meticulously picked out. And finally, to preserve all of the sweet, complex flavors we love in this coffee, it was sealed in vacuum packaging, only to be opened for this special occasion.

Esperança: Lua
Campos Altos, Minas Gerais, Brasil

Bruno Souza is a legend in the Brasilian specialty coffee world. Producer, roaster, teacher, importer and cafe entrepreneur, Bruno has done it all in the name of excellent coffee. Following in the footsteps of his father, Bruno holds tight to some traditions since lost in the coffee growing landscape of Brasil. In particular, he sticks to 'old school' varieties that showcase quality over quantity of coffee, and he still picks and processes his coffee in small batches, only after ripeness has hit its peak. What we also love about Bruno is how excited he gets to experiment, and this particular lot is something truly special. Borrowing a modern technique from the wine industry, Bruno picked picked his Icatu section of the farm under the full harvest moon. The ripe cherries were combined with a tart citrus fruit, locally known as 'lua', and then soaked for 36 hours underwater. To finish this process, the whole coffee cherries, along with lua fruit, are laid out on protected mesh drying beds, where they dry and transform over a period of several weeks.
